TURNIP TOPS

Ingredients for

2 people:

400 g of 00 flour;

400 g of water

1 tablespoon of dry brewer's yeast;

1 teaspoon of salt;

1 teaspoon of oil;

1 jar of Cime di rapa Mirogallo;

Fry oil;

salt to taste;

Recipe process

Cooking time around 40 minutes

In a bowl combine the dry ingredients: flour, salt and yeast;

With a fork mix well;

Add the water and the oil, always mixing with a fork;

With the help of scissors, cut the turnip greens into small pieces, well drained from the oil, and incorporate them into the dough;

In this way a soft and liquid batter will be obtained;

Cover the bowl with transparent film and let it rise in a warm place for 2/3 hours;

In a pan, heat plenty of oil for frying;

When the oil has reached the temperature, with the help of a spoon, take a little dough and slide it into the hot oil with your finger;

The breasts will immediately swell and float to the surface;

Turn and brown them well;

Drain and dry on absorbent paper;

Adjust the salt and eat hot.
