Our farm is located in Matera, a city recognized by UNESCO in its “World Heritage List”, and precisely within the "Park of the Rupestrian Churches”.
From the history of our beautiful territory and our love for nature, in 1998 we decided to realize the company laboratory with a purpose: to pass on to the new generations the flavors and traditions of the Lucania’s land.

We grow old local cultivars in order not to lose our roots. We select only the most suitable vegetables and fruits for processing, harvesting them only at the right degree of ripeness. We use cultivation techniques with low environmental impact and we preserve our freshly harvested vegetables and fruits in the company laboratory, which is only a few meters from the fields. Vegetables and fruit intended to processing are grown directly in our fields. This choice gives us the opportunity to choose the varieties with the best organoleptic features, to search old varieties, to adopt the most appropriate cultivation techniques.
The taste of preserving:

a few hundred meters from the fields, the transformation takes place in our laboratory.
We preserve our vegetables and fruits with love, in the heart of the farm, a few hundred meters far from the fields, the processing takes place in our laboratoryusing traditional and typical methods of our territory. We select for each vegetable or fruit the best method, choosing among drying, salt or pickling in oil and using natural preservatives such as vinegar, salt or lemon juice. We only use Extra Virgin Olive Oil, because it is healthy and genuine, digestible, rich in antioxidant properties. For our containers we use exclusively glass because it keeps its content uncontaminated and is environmentally friendly, being usable and 100% recyclable.

Our processing
Only traditional methods
Preserving is a real art which needs passion and appropriate knowledges, starting from the choise of the food, which must be extremely fresh and top quality. To this must be added the choice of processing methods: ours are ancient methods, taken from the tradition of our territory, as the drying, the under salt, the preserving in oil. We only try to find the method which is the most appropriate to a food rather than an other.
Only natural preservatives
Considered as the method used to prevent the deterioration of food, due to chemical factors (oxidation), physical (temperature, light) or biological (microorganisms), the preservation can take place in various ways, requiring, inter alia, the use of preservatives. Our company has preferred exclusively natural preservatives as: vinegar and salt.
Only Extra Virgin olive oil
Scelto per isolare le verdure dall’aria, così da bloccare l’azione dei microrganismi aerobi, è l’unico olio vegetale ottenuto tramite pressione, senza manipolazione o additivi chimici, a differenza degli oli di semi (soia, arachide, girasole, etc). Costituito prevalentemente da acidi grassi monoinsaturi, con la presenza in giusta quantità di acido grasso linoleico, polifenoli, vitamina E e beta carotene, contiene le vitamine E, A, K, D che hanno proprietà antiossidanti ed effetto protettivo sulle cellule dell’organismo.
Only glass containers
The use of glass as main material of our containers comes from the countless advantages it present:
It forms a total barrier against oxigen;
It is a natural material and, not giving any tipe of substance to the product, mantains the content absolutely uncontaminated;
It is an ecological material, since, because of its chemical structure, it doesn’t pollute, meaning that it doesn’t cause reactions in contact with the environment;
It is respectful of the environment, since it’s the only container usable a dozen of times and 100% recyclable.
