MOZZARELLA SKEWERS

with anchovies and courgettes

Ingredients for

2 people:

200 g of small mozzarella;

1 jar of zucchini rolls;

2 eggs;

anchovy fillets;

bread crumbs q.b.

flour to taste

mint leaves to taste;

wooden skewers;

peanut oil for frying

Recipe process

Cooking time around 40 minutes

Drain the mozzarella well;

Prepare three small bowls with flour, breadcrumbs and the two well-beaten eggs;

Dip the mozzarella balls first in the flour, then in the egg and finally in the breadcrumbs;

Make a second pass in the egg and breadcrumbs;

Repeat for all the mozzarella balls;

Heat plenty of oil in a saucepan and fry the mozzarella balls until they are golden brown;

Drain well and place on absorbent paper;

Drain the zucchini rolls well;

Roll up the anchovy fillets;

First thread the anchovy fillet, then the mozzarella, the mint leaf and finally the zucchini roll;

Repeat until all the mozzarellas are used up;

Plate up and serve.
